Transcript: Japan!! By: Yoka Murakami 7F How did Nanban Trade change the sweets in Japan? About Nanban Trade About Nanban Trade Japanese trade with mainly Portugal, Spain and Netherlands It began in 1543 and ended by 1639. It began by Portuguese ship which came to Kagoshima prefecture. But supervision of Christianity by Shogunate, extentions of commertial rights by England/Netherlands and Japan's National Isolation affected it badly. And in 1639, it ended with deaths of people from Netherlands. 1543~1639 History History The part shown is when Nanban Trade was. Image This is an illustration by Japanese people at that time. EXAMPLES OF SWEETS What is "Nanban Sweets"? Nanban Sweets are the sweets that were imported by Nanban Trade. They were mainly from Portugal, Spain or Netherlands. They were prized since they were made with flour, sugar, eggs etc which were not familiar to the Japanese people. Christian Missionaries used them to spread Christianity. Castella was brought to Japan in 1556 by Portuguese people. It is based on Portuguese sweets "pão de Castella". It is a type of cake, which is very soft, and made with Flour, sugar, egg and honey etc. In 1596~1615, it became so popular. It took about 400 years for Japanese people to investigate and develop perfect way to create castella. Castella CASTELLA Interesting Fact: At first Japanese people thought castellas are for medical use because it included honey! Its name comes from Portuguese word "confeito" which means "Sugar sweets". It was brought to Japan in the end of 16th century, and people in Nagasaki Prefecture started to produce them there. Using small seeds or type of sugar as core, it is made with thick layer of sugar, which creates its special shape. It became so popular because of its unique shape. Konpeito KONPEITO Now it is one of very cheap sweets, but when it was popular, some workers even made 70 kg of konpeito by the hand! The name "Karumera" comes from Portuguese word "Caramello" Today it is one of very cheap sweets made with raw sugar, water and baking soda, but at first it was made with egg and ice sugar, which made them more expensive. Also, it lost its original value because it was very easy to make. Honeycomb Toffee (karumera) HONEY COMB TOFFEE Today it is very rare and sometimes can be seen in the food stall etc. (Even I have never seen or tasted it!) First biscuit in Japan was made in 1875. In Japan, they are different from Cookies. Mostly biscuit is thinner and crunchier than cookies, and includes less fat (butter, etc.) Biscuits can be divided into 3 big groups: Hard/Soft/Fancy. Fancy Biscuits are made with more egg and sugar than Hard or Soft, and It has unique and "FANCY" shapes. Biscuit BISCUIT And this is "Fancy Cookies" It is based on sweets from Portugal. It is made with flour, egg and sugar etc. Most basic shape of Bolo is small and round. There are so many types of Bolo, so some of them are lot more bigger and have flower shape.
